Use of cyclodextrins to limit product inhibition of (S)-phenylalanine ammonia lyase

Abstract

The extent of product inhibition of (S)-phenylalanine ammonia lyase, in catalysing the conversion of (S)-phenylalanine intotrans-cinnamate, is reduced, and the efficiency of the reaction increased, through the addition of a cyclodextrin to sequester the cinnamate.
