Liquid Chromatography Coupled to Tandem Mass Spectrometry to Analyze Imidazole Dipeptides

In this chapter, the different analytical methods reported in the literature for the analysis of bioactive imidazole dipeptides, such as carnosine, anserine, homocarnosine and balenine by liquid chromatography (LC) coupled to tandem mass spectrometry (MS/MS) as the detector system are revised and discussed. The different chromatographic modes, analytical columns and mobile phase are discussed. Special attention is placed on the use of tandem MS. Additionally, the application of these methodologies for the analysis of these bioactive dipeptides in meat and biological samples with their sample pretreatment strategies has also been examined.
