Potential Detrimental Effects of Acrylamide on Health
Acrylamide is a heat-induced contaminant formed through coffee roasting. The toxic properties of the compound and the important levels usually found in coffee give rise to major concerns for all those who appreciate this so distinctive drink. This short section reviews the main features on the metabolism and toxicity of acrylamide, with emphasis on neurotoxic, reproductive, developmental, genotoxic, and carcinogenic effects. It also briefly reviews the main recent achievements on mitigation of acrylamide toxicity by means of natural products.
