Potential Effects of Trigonelline and Derivatives on Health
Epidemiological studies suggest that coffee drinking can reduce the risk of a number of diseases. In the last two decades, trigonelline and a few derivatives produced during roasting were found to contribute differently to coffee bioactivity, especially to the effects related to blood glucose and lipids regulation, among more recently investigated ones such as neuroprotection, antifibrotic and hepatoprotective effects; antioxidant, anti-inflammatory and anti-tumoral effects and gastroprotective effect. Trigonelline has also been considered as a phytohormone candidate. The present chapter will briefly review these findings.
