We demonstrate for the first time that cellulose nanofibers obtained from natural sources have the capability to hydrolyze the amide bonds of amino acid substrates in a chirality-specific manner. The chiral specificities were clearly correlated with the species of amino acid units and the crystal structures of cellulose.
