Errors in the determination of glucosinolate in rapeseed using glucose oxidase-peroxidase

Abstract

The determination of glucosinolate in rapeseed by measuring the amount of glucose, a by-product of the enzymatic degradation of glucosinolates, is discussed. The error due to endogeneous inhibitory compounds within rapeseed extracts when using a glucose oxidase-peroxidase system is highlighted. Five methods, four of which involve the determination of glucose are compared.
