An 17O nuclear magnetic resonance relaxation-time study of sucrose–water interactions
Abstract
An 17O n.m.r. spin–lattice and transverse relaxation-time study of aqueous solutions of sucrose over the range 0–70% w/w sucrose and from 305 to 370 K is reported. The results are analysed in terms of their dependence on viscosity and concentration, and it is concluded that they are consistent with each sucrose molecule slightly modifying the correlation time of ca. 16 water molecules which surround it.
