7  Structure and rheology of aqueous gels

Abstract

The experimental techniques of scattering and rheology are discussed, in the context of determining the structure and mechanical response of aqueous physical gels. In particular simultaneous scattering and rheology studies are discussed. This review paper covers the rheology and structure of gels of poly(oxyethylene) based copolymers, poly(vinyl alcohol), gelatin and starch.
