Thermodynamics of the interactions of ascorbic acid withα- andβ-cyclodextrins in aqueous solutions

Abstract

As found by calorimetry and densimetry, ascorbic acid forms a molecular 1:1 complex withα- but not withβ-cyclodextrin in aqueous solution.
