Determination of specific gravity and concentration of fruit juice concentrations and other viscous concentrated solutions

Abstract

An accurate method for the determination of the specific gravity of viscous concentrated solutions at ambient temperature is described. The method, based on the linear correlation shown to exist between the refractive index and the concentration (w/v) in solutions of mixtures of solutes, is applied to concentrated fruit juices.
