Classification of raw sugar by PCA of voltammetric signals from tube electrodes
Abstract
Electrochemical methods of analysis are increasingly used in enterprises of various industries. With their help, the problem of improving the quality of products is being solved, which is increasingly becoming a determining factor in the performance of any enterprise. The study object in this work is sugar and sugar color. Determination of sugar quality is an actual task in the production of alcoholic beverages: sugar itself is a raw material for production; in the form of colors it is a dye for drinks. At present, due to the high demand for sugar, counterfeiting is being fought. In this paper, a method is proposed that allows one to distinguish sugar and color of different manufacturers between themselves, as well as cane sugar from beet sugar. Using the SIMCA classification, it was shown that the errors of the first kind do not exceed 3%, and the errors of the second kind do not exceed 8%. This method can be used in the food industry for rapid analysis of the origin of sugar and other soluble products.
