Monitoring fluorescence emission behaviors of dietary polyphenols in a serum albumin environment†
Abstract
The fluorescence emission behavior of bioactive dietary polyphenols in serum albumin has been explored in order to understand their spectroscopic properties along with their binding characteristics using multi-spectroscopic and molecular docking studies. The dual emission character of kaempferol (KMP) within the serum albumin environment suggests that it can be used as a multi-wavelength fluorescent probe.
