Pickering emulsion templated soft capsules by self-assembling cross-linkable ferritin–polymer conjugates

Abstract

Oil-in-water (o/w) and water-in-oil (w/o) Pickering emulsions were prepared using ferritin–polymer conjugates. UV cross-linking stabilised the particle assembly around the fluid droplets. The resulting soft proteinpolymer capsules were transferred to a medium of equal polarity as the inside of the capsule, creating water-in-water (w/w) and oil-in-oil (o/o) capsules.
