In situ Fourier-transform infrared spectroscopy monitoring of the effect of microwaves on bovine serum albumin

Abstract

In situ Fourier-transform infrared spectroscopy was used to monitor, in real time, the effect of microwaves on bovine serum albumin. Coupled with off-line spectrum technology which could monitor protein conformation changes before and after irradiation, this technology would allow further understanding of the mechanism of microwave interactions with proteins.
